Delete cats

I have a 1997 tahoe and the cats are clogged and o2 get to hot or something and truck shudders and then won't stay running can I just take them out and put straight pipes in place of them and maybe a spacer for the o2 sensors or what can I do to eliminate this problem? Thanks in advance!
