Default Im new, building custom truck and have a lot of questions

Hey everyone, I am going to build a 70s-80s Chevrolet crew cab 4x4 truck and have a lot of questions regarding which parts to use for the build. Here is the ideal characteristics of the truck i would like.

-350 gas Engine
-5 speed manual transmission
-4x4
-As fuel efficient as possible
-Easy to work on
-3/4 ton
-Smooth driving on freeways at 70mph

I would appreciate any advice on different parts. I am either going to buy used parts or have them rebuilt or just buy brand new parts. I goal for this truck is simply just to have a good old truck that I can take on a trip, hook a boat up to it, and not have to take it to a mechanic every time it breaks down. I currently own a 77 chevy 3/4 auto truck and love how easy it is to work on but wish it could fit 6 people and the guy who owned it before me abused it pretty badly so it has issues every now and then. Which is why I want to build this truck to be pretty much a brand new rig...I know how to take care of cars properly so if its brand new then I at least know everying is perfect to start off with.
