It depends on where you live. If you live in say, California, or some other state that has emissions requirements, they will cut off one of your hands if they catch you with no cats. I live in Arkansas right now, where no one gives a crap about anything, so I cut mine off.
Also, on newer trucks- losing the cats will throw trouble codes and kill your mpgs because the O2 sensor will get pissed off. A O2 simulator tricks the computer into thinking the cats are still there and you wont have any more codes thrown. Mine cost about $40 installed. Its just a little black box that you wire into the O2 sensor under the truck. pretty easy fix, but they are illegal some places. once again it just depends where you live.

You would want to consider shorty headers if you live anywhere that you have to meet emissions requirements, long tubes otherwise. Shorty headers should bold right up to the exhaust flanges as they are pretty much a direct replacement for the stock exhaust manifolds.
