Stock is typically 195. Then they make a custom 180 and 160 degree stats to lower operating temps.
The thermostat being the temp control (usually disk shapoed device) inside the water neck on the motor. It regualtes the engine temp by controlling coolant flow to the radiator and therefore the overall engine temperature. 195 degrees is factory engine operating temp.

I was thinking of changing mine back to stock but I found out that the hypertech runs the engine between 180-190 anyway. It simply opens part way at 180 and all the way at 190. I would say the engine runs consistantly at 190 so I guess I'll leave it go. The two stage is hypothetically supposed to regualte the temperature more evenly. But it might just be a gimmick.
