Default intake plenum performance

So Im working on a custom 4x4 bronco/vw-van project and I am having big problems with how tall the 302 fuel injected motor is. I am aware of the differences and reasons that the 302 intake plenum is tall for trucks and short for cars. Since I need to lose all the hight off the top of the motor that i can to clear the hole its got to be in. Can anybody tell me what i might experience if I were to swap the intake off the bronco with the low car model intake plenum or even using an engine out of a car or mustang. And i wont be using this truck for heavy hauling or spinning large tires. Its going to get low gears and medium sized tires and will be close to broncos factory weight but just a little heavier with camping supplies and people. Maybe i should switch to a carb and performer intake. F150s and broncos have had those in them havnt they??

I'm not sure what exactly the issue is, but would a 351 ford fit better?

the fuel injected ford 302 and 351 truck engines have a very tall profile compared to say the v8 mustang or sudan engines. The engine compartment in which i have to put the engine in on this custom is low compared to the compartment of the bronco or truck. There for I am having to lower the engine and come up with a solution to the tall v8 truck engines. Say like installing a low profile intake plenum from the car engines onto a bronco engine. Or going with a carb and performer intake
What troubles are the engine going to have in a truck with a low profile plenum. And i tried to describe my exact question in my original post.

I have been told that the higher rise intake helps with low end torque. I don't think you will have a reliability issue with the lower intake, but might lose out on some torque.
