Default gas gauge....

I have a 99 Tahoe LT with a 5.7L engine. This is the second GM vehicle that i have owned, i previously had a 94 gmc safari. In both vehicles the gas gauges, i'm pretty sure, have been messed up. I'm not exactly sure the size of my gas tank, but when i fill up the gauge will go at least a few cm's bast the F mark. Then i can drive 250 miles before it passes the half tank point. then by 300 i'm at 1/4 tank, and by 320 i'm quite close to E. Is this the way it works for all chevy/gmc's? I know for a fact that the gas gauge on this tahoe was fixed once before i acquired it. If it is still messed up then what can be done to fix it? if this is the same way for others, then when is my tank on empty? will it be empty on E? before? after? will my low fuel light still come on? do i have a low fuel light? is it on the same system as the gauge or is it a seperate sensor? thanks for the feedback
