Doing a complete front / rear brake job should I chang out rotors ?
and what should I replace brakes are in bad shape.

depends on how bad they are wore/warped. Anymore it seems with the newer brake jobs you just replace them every time

 

change pads and rotors. they are not that much money and sometimes when you just change the pads you can get a pulsation or squeaks. Some 05 trucks have drums on the rear. if they are rotors expect to change parking brake shoes as the will normally break when taking off rotor. These trucks need the brakes serviced atleast twice a year, spring and fall.
