Only problem is I do not want to go too crazy on cooling the trans. Between the tune and the cold weather, the winters up here really make this thing shift hard for the first 10-15 minutes you are driving it. I would like to have some sort of bypass for it for the winter.

My preference in your situation would be to cool it as much as possible (longevity would be the main concern IMO). If hard shifting is a problem, maybe just let it warm up a bit more, or put a bypass in so you can bypass the cooler in the winter.

Yeah a bypass would be great. You could do one for the trans cooler and the throttle body too.
Damn Yankee is your truck an eveyday driver?
